Rosemary Garlic Flank Steak with Blackberry Sauce

Who doesn’t love seared flank steak?  Elevate it with a beautiful blackberry pan sauce and pair with our Maneater Blend.  Serve simply with mashed potatoes and roasted broccolini.  Easy enough for midweek, elegant enough for guests!

Ingredients

  • 2 - 2.5 pound flank steak
  • EVOO
  • 2 tsp fresh rosemary chopped
  • 1 tbsp garlic minced
  • 3 tbsp blackberry jam
  • 2 tbsp cider vinegar
  • cup of chicken stock
  • generous pat of butter to finish sauce

Directions

Bring flank steak to room temperature and coat with EVOO, rosemary, garlic, salt, and pepper.  Get your favorite cast iron skillet nice and hot and sear the steak on each side for 4 – 6 minutes, depending on thickness and doneness desired…my recommendation is cook to medium at most.  Once cooked to your desired temperature, rest while prepping sauce.  Deglaze your pan with chicken stock, add jam and whisk until incorporated.  Add vinegar, whisk, add butter and whisk again.  Season to taste.  Slice at 45 degree angle against the grain, plate and top with pan sauce.
